Sponge Cakes

Hello everyone

I'm looking for a recipe for a sponge cake.

I'm making a wedding cake (what have I let myself in for) and they want a sponge cake. I've no problems with the almond paste and the icing but it's the sponge cake itself that is becoming a bit of a nightmare.

I've got a year until the wedding but I'm practising with different recipes so I won't be in a panic nearer the time. A Victoria sponge is too light to take the weight of the almond paste and icing. Maderia cake is too heavy a sponge for digestion IMO sooooooooooooooooo anyone got any sponge cake recipes that they don't mind sharing.

If Victoria sponge is equal quantities of butter, sugar, egg and SR flour, and a madeira sponge is equal butter, sugar and egg with 50% extra flour (and the juice./zest of a lemon), then I'm not sure what you're going to find which is between the two to be honest.

I think you just need to trial and error to get what you want: thank goodness you have a year!!

My recipe, which i use time and time again for all my cakes, and people do say its really really light is this:-

250g unsalted butter
250g caster sugar
4 eggs
1 tsp vanilla
250g SR flour
4 tsp baking powder
3 tbsp milk

cream butter and sugar really really well, until pale, in a mixer if possible, add eggs 1 at a time, scraping bowl inbetween each egg being added, add the vanilla, sift in flour and baking powder, mix well ensure you scrape the bowl to mix everything together, add the milk and then mix again for about a minute. If you want to make chocolate add 505 cocoa with the flour

This will make 2 small cakes or 1 larger cake

Bake at 180 for about 30 mins but check after 20 mins with a skewer
